My roommate, Sara, and I made this for dinner tonight and it turned out quite delicious! Feel free to mix up the veggies to your liking! Also, these measures are approximate since I didn't actually measure everything...just season it to your liking :) We haven't thought of a creative name for it yet though!

2 cups whole grain pasta (rotini, penne, etc. it's your choice!)
2 tablespoons olive oil
2 free-range chicken breasts
1 tablespoon Italian Seasoning
1 garlic clove
1 cup grated carrot
1/2 white onion, diced
1 cup grated zucchini
1/2 cup whole kernel corn (we used frozen but fresh or canned would work too!)
1/2 cup mushrooms
1/4 cup pine nuts
1/2 cup shredded mozzarella
salt and pepper to taste

Bring a pot of water to a boil. Add pasta and cook according to directions on the box. Drain and reserve.

Add olive oil to a large saute pan over medium heat. Chop the chicken breast into chunks. Sprinkle with Italian seasoning and saute in oil until cooked through. Remove chicken pieces to small bowl preserving the leftover liquid. Finely mince the garlic clove or use a garlic press and add to pan. Saute with onion and carrot for about 3 minutes. Then add zucchini, corn, mushrooms, and pine nuts. Continuing sauteing for at least another 5 minutes. Add the chicken back to the mixture and cook for a minute to reheat it. Sprinkle mozzarella over the entire dish and allow the cheese to melt.

Serve the vegetables and chicken mixture over the cooked pasta. Season with salt and pepper to taste and enjoy :)
